Also known as a salmon cut, silverside is a leaner cut than the topside. This roast is well suited to a slow pot roast, but also works well braised. Seasoned and sat upon some seasonal veg its stock and juices will give you a superb base for a tasty gravy.

How to Cook
Different cuts of meat require different cooking methods, but we would always recommend you season the meat and bring up to room temperature before cooking and, after cooking, leave to rest for 10 minutes before serving.
